Sip & Craft: A Hands-On Journey Through Mexican Spirits

Immerse yourself in the rich history of Mexican spirits as I teach you about the ingredients, origins, and craft of cocktail making, right in the heart of historic Mérida. • I’ll take you through a tasting of four distinct Mexican spirits, such as tequila, mezcal, sotol, bacanora and raicilla. We’ll explore different aromas, flavors, and textures as I share insights about the terroir, heritage, and production of each spirit. • You’ll have a chance to create two cocktails under my guidance: a classic like a paloma or mezcal margarita, as well as a contemporary drink inspired by local ingredients. • Once you’re finished making your cocktails, we’ll serve small Mexican bites to enjoy with your cocktails, and you can ask me questions. You’ll get to take home a recipe card and a small bottle of spirits as a farewell gift. Note: This experience is for guests age 21 or older.

Amazing Uxmal & Cenotes

This experience starts from Mérida, we are going to immerse ourselves in this adventure and walk for a while through an ancient Mayan city. We will visit the Mayan city of Uxmal, where you can admire an impressive architecture and different from other pre-Hispanic cities, I do not enter Uxmal with you, but I will be waiting for you at the entrance so you can freely enjoy this place and you can take many photos and during the trip we will talk about all the history! Then to recharge the batteries we will eat in one of the nearby villages, a rich and typical regional food made to the wood from a local family. Finally we are going to cool off in a couple of cenotes, where we will know 2, one is open, with fauna and turquoise blue water, the other cenote is semi closed cavern type, with caves under the water and where we can dive with the snorkels to admire each of them. Our tour starts meeting at Plaza Grande, one of the most iconic places in Mérida. From here we start our way by getting some traditional refreshing drinks and get our first dish of the day, gorditas. We continue visiting one of the main food markets in town (a really authentic and local place). We’ll have salbutes, tamales and also try some local fruit. On every fair in Mexico, one of the streetfoods sold are churros. They are a delicious snack which you can enjoy at all times of the day. In this Mexican cooking class we will teach you how to make those delicioius churros, an excellent chocolate ganache for dipping, and a accompanying Mexican coffee, café de Olla. The chocolate ganache as a dipping for Churros is not a coincedence. The Mayan people claim to be the inventor of the use of Mexican cacao beans. We will make all products from scratch and we will follow the traditional way on how to make them. This means you can also make them easily at home. After the class we will send you some photos and the recipes. Our location is in the historic center of Merida, in the popular neighborhood of Santiago. We will perform the class in one of the professional kitchen restaurant Johannes which is inside the magical boutique hotel Merida Santiago. This Experience Churros, chocolate and cafe de Olla is easily adaptable to vegetarian, vegan, or gluten-free dietary preferences. Ever heard of Zapote, Mamey, Achiote? We will explain all about them and let you taste so much more.. Then back to the beautiful colonial style hotel for hands on chopping, slicing and mixing. This is the time to test the chef with questions like: "what is the secret of a good guacamole?" or "what is the difference between tequila and mescal?", "Can I have a Xtabentum?" Ai ! we forgot the buy the Chaya, no problem we will harvest it fresh out of the garden. Meanwhile the panuchos, brazo de reina, cochinita, guacamole, sopa de lima or other food gets close to be ready, Metzin, our charming hostess, took some pictures of you doing all the hard work in the kitchen. Dans ce marché vous trouverez de tout et il y’a en a vraiment partout! Depuis 5 ans que je vis à Merida, je le connais de fond en comble. Animé d’une soif de découvertes et de belles rencontres, pour ma part, j’ai choisis Lucas de Galvez comme mon terrain de jeux préféré. Notre visite nous amènera à comprendre comment est organisé le marché et découvrir chaque allée qui regorge de trésor. On commencera par la section des objets religieux qui ont une place importante dans le cœur des Mexicains. On enchaînera avec la section des épices pour en explorer les couleurs et les odeurs typiques. On découvrira le marché alimentaire pour connaître les spécialités du Yucatán, les fruits, les légumes, les pâtisseries, les sucreries…sans oublier les nombreux artisans… le tout dans une ambiance populaire et bon enfant. A Market Tour for Plant Food Enthusiasts

Mercado Lucas de Galvez is Merida's largest market, and it can be pretty intimidating for the first time visitor. As a California native who married a Yucateco and moved to his hometown of Merida, I had to make trip after wandering trip to this market before I got really comfortable. I will lead you on a curated, plant based tour of this vibrant, labyrinthine place, starting in beautiful Parque San Juan on the edge of the old walled city, putting the modern market in the context of Maya agriculture and diet and the city's colonial history. After snaking through the bustling shopping district surrounding the market, I will introduce you to my usual vendors and we will taste what is fresh and in season, from warm tortillas to ice cold aguas frescas, squishy sweet stain-your-hands zapote negro to crunchy scrunch-your-face-sour grosella. Many visitors to Merida are familiar with the famous pork and turkey dishes like Cochinita Pibil, Pavo en Relleno Negro, Sopa de Lima and Panuchos. What interests me are the fruits, vegetables, herbs and spices that make up those dishes and others in the Yucatan gastronomy; the citrus and chaya that grow willy nilly throughout the city, the fresh beans and jicama my neighbors remember harvesting as kids, simple and filling masa based snacks, and the countless fruits enjoyed with chile and limon. Tequila & Mezcal, Traditional Pairing and some Mixology

The exiting tasting will start at 6 pm at Mérida Santiago Hotel Boutique and will last about 2 hours. In the short introduction we will give you some information about history, regions and differences between tequila and mezcal. The tasting will start with in total 4 small shots of tequila and you will be able to understand and taste the difference between them. Some exotic flavorful Mexican snack will be served with it. After the tasting you will prepare your own signature cocktail with tequila and have a small gourmet snack, prepared by the chef of Mérida Santiago Hotel Boutique. Then the mezcal tasting starts. In total we will try 4 small shots of quality artesanal or ancestral mezcales and explain the difference between them. Be mentally prepared to eat the Mexican way and find out how delicious the Chapulines (crickets) or Nucu (flying ants) are and how well they match with Mezcal. Then you will prepare your own mezcal cocktail which will be perfectly paired with a less challenging gourmet snack. The end of this wonderful experience full of flavors, fragrances and taste will be around 8 pm. In case you like to enjoy the atmospheric Mérida Santiago Hotel Boutique a little more, it will be possible to order some drinks at the bar or try the delicious food at the pool side restaurant.
